Hello,
So far I'm liking this plugin, although I am having some struggles getting it set up, but that's another issue for another day…
What I was wondering is if it's possible to define the dimensions of the slider div in percentages. My layout is fluid, and therefore the width of my content area changes based on screen size. I'd like for the DCG to adapt to these changes. Can I manually edit the stylesheet rather than defining the width in pixels on the settings page? And if I do this, will it cause problems with the plugin?

OfflineTry it and see. Images aren't elastic elements, so it makes sense for the gallery to be a fixed width (in pixels). However, you can try overriding the plugin's CSS and see what happens. (I've never tried it, so I don't know what the result will be.)
